Love at first bite!

Kati’s favourite pizza

With a white base and delicious blend of mustard and maple syrup.

We are obsessed with pizzas and love experimenting with new flavor combinations. Trust us, there’s a ton of flavor in this one. We swapped out the usual tomato base for a creamy white sauce and garnished it with a sweet mustard sauce, that only takes a few minutes to make. We made the dough with cold fermentation and proofed it in the fridge for 24 hours to develop the flavors and a nice crust during baking.

Ingredients

Pizza dough:

  • 3 cups all purpose flour
  • 1 1/8 cups lukewarm water
  • 0.5 tsp instant dry yeast
  • 1 1/4 tsp salt
  • 1 tsp sugar
  • 0.5 tbsp olive oil

White base sauce:

  • 2 tbsp melted vegan butter
  • 2 tbsp flour
  • 1 1/4 cup plant-based milk
  • Pinch of black pepper
  • 2 garlic gloves, crushed
  • 1/4 cup vegan parmesan, shredded

Toppings:

  • Plantcraft plant-based pepperoni
  • Mushrooms
  • Red onion
  • Fresh basil leaves for garnish

Mustard sauce:

  • 1/4 cup maple syrup
  • 1/4 cup vegan mayonnaise
  • 1/4 cup Dijon mustard
  • 1 tbs white vinegar or lemon juice
  • 1/4 tsp cayenne pepper

 

Instructions

  1. Add water to a bowl. In a separate bowl incorporate salt and dry yeast into the flour. Once mixed, add the flour mixture into the water until all the flour is incorporated. Once all of the flour is incorporated, add the oil and knead the dough for about 5 minutes. After kneading, divide the dough into 2 equal size balls, place them in a well-oiled container and refrigerate overnight.

  2. Remove the dough from the fridge about one hour before baking. Preheat your oven and baking pan or pizza stone at 550 degrees (287 Celsius).

  3. In the meantime, prepare the base and the mustard sauce. For the white sauce, melt butter in a saucepan, whisk in flour and continue to whisk for a couple of minutes. Slowly add in the milk and continue to whisk until you have a smooth mixture. Once smooth, add salt, black pepper, crushed garlic, and parmesan and whisk for another minute. Remove from heat and keep whisking until cheese is melted.

  4. Add all ingredients to a small bowl for the mustard sauce and whisk them together to form a nice creamy consistency.

  5. Form a nice round pizza with your dough balls and transfer them onto parchment paper. Spread the sauce evenly across your pizza, add vegan shredded cheese and the toppings. Transfer the pizza onto the preheated baking pan or stone. Bake until your crusts begin to brown and cheese is melted.
