Vegan pâté zucchini roll-ups

Healthy finger food with a nice crunch.

These elegant zucchini roll-ups are filled with our delicious pâté, carrots, capsicum, and beansprouts. They are easy to make and look fancy and impressive. You can swap out the vegetables depending on what you have in your fridge. Cucumber, beetroot, and celery are also great accompaniments to our flavorful pâté.

Ingredients

  • 1 zucchini, medium/large
  • 1-2 Plantcraft pâté, mild or spicy
  • Carrots, julienned
  • Capsicum, julienned
  • Beansprouts
  • Micro greens, parsley or thyme to garnish

Instructions

First chop the ends of the zucchini, peel, and proceed to cut it into slices until you used up the whole zucchini. Poke the pâté chub with a knife and spread the pâté onto the raw zucchini slices. Layer with the julienned vegetables and sprouts. Carefully roll them up and place them on a serving plate. Add some parsley, thyme, or microgreens to garnish.
